Homemade Delicious Summer Rolls

I started cooking a few Cambodian dishes since I moved to Germany because going to a restaurant here is more expensive than home cooking. And the flavor often got Germanized for the locals. Plus sometimes cooking can be fun and I can add as much as I like of any of my favourite ingredients. One of my favorites is summer rolls, it's finger food and easy to make.

Before Germany I never made summer roll, but I sure ate a lot of them. In Cambodia, you can easily find summer rolls, spring rolls and any other rolls at any local market and restaurants. They are not expensive, but it is so delicious. I ate so many that I was able to pick up the ideas of how to make them. Also I came up with a combination of ingredients that I like which are listed below. However, making summer rolls should not be about any rules, you should simply role anything you like, and that's it.

For this easy recipe you need:

  • Rice paper (round, can be found in most Asian store)
  • Chicken
  • Shrimp
  • Ginger
  • Garlic
  • Cucumber
  • Carrots
  • Bean sprouts or any other kind of sprouts you like
  • Mint, Basil and Cilantro
  • Peanuts
  • Dry onions
  • Soy-sauce
  • Sugar
  • Salt
  • Hoisin Sauce

Preparation

  • Cut the carrots and ginger in thin long slices
  • Slice the cucumber
  • Chop the garlic
  • Clean the sprouts, mint, basil and cilantro
  • Ground the peanuts
  • Cut the chicken into thin long slices

Short note: 
Lay the vegetables in a way that you can access quickly when working.

Frying the meat and shrimp:

Now after everything is prepared, cut and chop we continue with frying.

Usually chicken contains much water, so I normally like to let the water out by frying the meat in a pan without any oil or other ingredients. After 5 minutes take the meat out and pour the water away. After getting rid of the water, put a bit of oil into the pan, add the chopped garlic and ginger. Then add the chicken and shrimps and stir everything. Add salt, sugar and soy sauce based on your preference.

After the meat & shrimps are fried:

Once the meat and shrimps are cooked, and the vegetables are prepared, start heating some water. It doesn’t have to be boiling but it needs to be hot so when you put the rice paper in it it's getting soft.

Use a big plate that is bigger than the rice paper. Put the warm water in the plate, then rice paper for about 30 seconds until the rice paper is soft.

Start rolling

Take it out and put it on a plastic chopping board. Then start adding:

  • Fried meat and shrimps
  • All the prepared veggies and herbs
  • Add the peanuts and dry garlic
  • Roll & repeat with the next one :)
